This has to be the simplest enchilada recipe EVER. It takes me all of 15 minutes to prep. The best part? They're DELICIOUS. Annnnnnd they warm up well the next day!
Ingredients
1 lb ground beef (best if bought locally from a farmer or meat market)
1 tablespoon of taco seasoning (see my taco pizza recipe http://cleaneatingsmallerbutt.blogspot.com/p/taco-pizza.html)
1 pint tomato sauce (homemade or organic)
1 tablespoon of ground cumin
1 tablespoon garlic powder
1 tablespoon onion powder
1 cup of water
Stacy's Organic tortilla shells (I get them at Harmony Foods)
2 cups fresh grated cheddar cheese
Preheat oven to 350 degrees.
On stove top, fry and crumble ground beef. When thoroughly cooked, add taco seasoning and 1/2 cup of water. Turn down on low and let cook for 5 minutes.
While meat is cooking, add tomato sauce, 1/2 cup of water, cumin, garlic powder, and onion powder together to make enchilada sauce. Let cook for about 10 minutes.
When meat is done, spoon into tortilla shells. Fold as shown below, and place in a cake pan (I prefer glass...if you don't use glass, you may want to spray with organic cooking spray) with folded side down.
Pour enchilada sauce over the top.
Top with cheese.
Bake for 30-40 minutes until the cheese is bubbly. Makes about 8 enchiladas.
