Mmmm...soft, chewy peanut butter cookies. Wait. Soft?! Yes, I said soft. I do not like crunchy cookies, so when I make peanut butter cookies, I don't squish them down with a fork or the bottom of a glass like most people. They stay in these cute little balls and are soft and yummy. :)
If you don't have peanut butter on hand and have to go buy some for this recipe, make sure you read labels. Just because it says "organic" or "natural" doesn't mean it's clean. Even all of the honey peanut butters that I found had sugar in them! I spent a long time reading labels on the jars until I found one that was clean. I ended up getting Smuckers Natural peanut butter. You have to stir the oil in, but it is really good.
Ingredients
1 stick butter, preferably organic
1/2 cup of clean peanut butter
1/2 cup coconut sugar
1/4 cup raw honey
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 egg
1/2 teaspoon vanilla extract (NOT imitation!)
1 cup spelt flour
Preheat oven to 375 degrees.
In a large bowl, mix together butter and peanut butter on high for about 30 seconds until completely blended and smooth. Add sugar, honey, baking soda, and baking powder. Mix until all combined. Add egg and vanilla. Blend in flour slowly.
Pour 1/2-3/4 cup of coconut sugar into a bowl.
Roll dough into 1 inch balls. Roll balls around in sugar and place on cookie sheet.
Bake for 8 minutes. When you take cookies out, they will still look a little doughy. Let stand on cookie sheet for about 1 minute and then transfer to a cooling rack. Let cool completely before storing.
