Yummy Clean Marinara Sauce



I love Italian food.  LOVE IT.  I think I could eat pizza, lasagna, or spaghetti almost every day.  However, I have yet to find a clean sauce in the stores that I like.  So I decided to heck with it.  It's time to just make it.  I'm glad I did!  It turned out fantastic!!!  The secret to the sauce is fresh basil and honey.  I tried making it with dried basil, and it just didn't taste as good.

This sauce can either be made in the crockpot or on the stove on low.  If I'm needing it the same day, I make it on the stove.  If I have time to wait or I have some place to go and will need to leave it for a while, I make it in the crockpot.  This recipe yields 2 quarts cooked down to the consistency of store bought jarred sauce.

Ingredients

16 cups of tomato sauce, either home canned or store bought.  (I always use home canned.)
3 tablespoons of fresh basil
2 tsp organic Italian seasoning (I use Frontier brand.  It can be found in most natural food stores & co-ops)
1 tablespoon minced garlic
2 tsp dried oregano
2 tsp onion powder
1 tablespoon raw honey
2 tsp extra virgin olive oil

Stir together either in a large pot on the stove or in a large crockpot.  If cooking on the stove, turn to low and cook for 6-8 hours or until it reaches the consistency you like.  Stir occasionally.  In a crockpot, cook on low for 18-24 hours.  If your crockpot runs cool like mine, you may have to cook on high.

When done, pour into 2-quart jars and refrigerate immediately.  Use within 2 weeks.
