No-Bake Oatmeal Coconut Treats
My favorite cookie in the whole world is my great-grandma's recipe for no-bake peanut butter oatmeal cookies. I haven't yet found a clean alternative for peanut butter, so when I cleaned up this recipe, I decided to try using coconut instead. It was fabulous! They tasted like an Almond Joy without the almond. :)
Ingredients
1 cup raw honey
4 tablespoons unsweetened baking cocoa
1/4 cup butter
1/2 cup milk
2 cups old fashioned oatmeal
1/2 cup unsweetened coconut
1 teaspoon vanilla extract (the real stuff, not the imitation! Imitation is full of junk.)
Bring honey, cocoa, butter, and milk to a boil on the stove stirring constantly. Boil only 1 minute. Add already prepared remaining ingredients. Stir together and spoon onto wax paper. Let sit until set up.
