Clean Crumb Cake


 I've never been a cake eater.  I just don't like it.  I do, however, love my great grandma's crumb cake recipe, so I decided to clean it up.  It turned out pretty darn good if I do say so myself.


Ingredients

2 cups oat flour
2 cups coconut sugar
1/2 cup organic butter, softened
1/2 teaspoon salt
2 eggs, preferably from a local farmer
1 heaping teaspoon of baking soda
1 1/2 cup of sour milk (I do almost 1 1/2 cup of milk with 1 tsp of vinegar OR fresh organic lemon juice)
1/2 teaspoon organic vanilla extract (NOT IMITATION)
1/2 teaspoon ground cinnamon

Preheat oven to 350 degrees.

Mix first 3 ingredients together with a fork.
 Set 3/4 cup of mixture aside.

Add remaining ingredients and mix until just blended.  Batter will be lumpy.


Pour into a 9x13 cake pan that has been greased and dusted with flour (I use organic olive oil spray and pastry flour).
  Spread the 3/4 cup of dry mixture on top.
 Bake for 30 minutes or until done.  When you insert a toothpick into the middle, it should come out clean.
